Peanut Butter Mini Blondies & Mini Golden Oreo Blondies

Peanut Butter Blondies

Peanut Butter Blondies:
3/4 cup creamy peanut butter
2/3 cup butter, softened
1 cup packed brown sugar
1/2 cup sugar
2 eggs
1 tsp vanilla
1¾ cups flour
1 tsp baking powder
1/3 cup milk
1 cup peanut butter chips

In a large bowl, cream the peanut butter, butter and sugars until fluffy. Beat in eggs and vanilla. Combine the flour and baking powder, add to creamed mixture alternately with milk, beating well after each addition. Stir in chips. Drop into mini muffin pan with cookie scoop for uniform size. Bake at 350° for 14-18 minutes (watch, do not overbake). Cool on a wire rack completely before frosting.

Buttercream Frosting:
1/2 cup butter
1/3 cup shortening
2 cups powder sugar
1 tsp vanilla

Cream butter, shortening and vanilla. Add powder sugar and milk to make a thick frosting consistency. Pipe frosting onto cooled PB blondies and add one Nutter Butter.

Mini Golden Oreo Blondies

8 oz white chocolate, chopped
1 Tbl vanilla extract
1/2 cup butter, softened
1¼ cups flour
2 eggs
3/4 tsp salt
1/3 cup sugar
1 cup white chocolate chips
Golden Oreo cookies

Preheat oven to 350°.  Spray mini muffin pan.  Melt white chocolate and butter in top of double boiler, over barely simmering water. Stir occasionally until smooth.  Set aside to cool.  In large bowl, using electric mixer, beat eggs until foamy.  With mixer still running, gradually add sugar and vanilla.  Drizzle in melted white chocolate mixture.  Combine flour and salt, fold into white chocolate mixture.  Fold in white chocolate chips.  Scoop batter evenly into prepared mini muffin pan.  Bake for 16-20 minutes, or until a toothpick inserted in the middle comes out clean.  Cool on a wire rack completely before frosting, with buttercream frosting above and press one quarter of a golden Oreo into each blondie.
