I love quick breads. So many different flavor possibilities, easy to mix up, bake, and take. Or just eat!

1¾ cups flour
1 tsp baking soda
1/2 tsp salt
1/3 cup almond butter (can sub peanut butter)
1/2 cup sugar
1/2 cup brown sugar
1 egg, beaten
1 tsp vanilla
1 cup buttermilk
1/2-3/4 cup mini semi-sweet chocolate chips
Preheat oven to 350°. Spray one 8×4 loaf pan or three small loaf pans. Stir together flour, baking soda, and salt, set aside. In a large bowl, cream almond butter and sugars together. Beat in egg and vanilla until smooth. Stir in flour mixture alternately with buttermilk, beating after each addition until smooth batter. Stir in mini chocolate chips. Spoon batter into prepared pan/pans. Sprinkle with sugar or sugar crystals if desired. Bake in preheated oven for 1 hour (large loaf) or 35 minutes (small loaves), or until pick inserted in middle comes out clean. Remove from the pan to cool.
