Orange Chocolate Chip Bread

Isn’t it great to combine flavors with chocolate?  Orange & chocolate, raspberry & chocolate, marshmallow & chocolate, peanut butter & chocolate, caramel & chocolate, the list can go on and on.  Here we have the combination of orange and chocolate in a quick bread, and it does not disappoint!

zest of 1 large orange, minced
1/3 cup orange juice
2/3 cup boiling water
2 cups flour
1 cup sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 egg
2 Tbl butter, melted
1 tsp vanilla
1 cup semisweet mini chocolate chips

Preheat oven to 350°.  Spray 1 large loaf pan or 3 small loaf pans.  In small bowl, combine orange zest, orange juice, and boiling water and let stand for 10 minutes.  In large bowl, whisk flour, sugar, baking powder, baking soda, and salt.  In another bowl, beat together egg, butter, and vanilla, then when OJ mixture is ready, mix into egg mixture.  Stir orange mixture into flour mixture just until moistened.  Fold in chocolate chips, then pour into prepared loaf pan or pans.  Bake large for 55-65 minutes, small for 32-36 minutes or until a toothpick inserted in center comes out clean.  Cool in pan on wire rack for 10 minutes before removing from pan/pans.  Cool completely on wire rack.
