These are delicious two bite (for me, one bite for my son) donut impersonators. No deep frying so they are healthy, no I guess not healthy but healthier than donuts.

1¾ C. flour
1½ tsp. baking powder
1/2 tsp. salt
1/2 tsp. nutmeg
1/4 tsp. cinnamon
1 egg
1/3 C. oil
3/4 C. sugar
3/4 C. milk (or buttermilk)
Preheat oven to 350°. In large bowl, stir together flour, baking powder, salt, nutmeg, and cinnamon. In another bowl combine egg, oil, sugar, and milk. Add wet ingredients to dry, and stir only to combine (do not over mix!). Fill mini muffin pan cups 2/3 full and bake for 20-25 minutes, or until golden brown.
Meanwhile, melt 1/2 cup margarine or butter and set aside.
Combine 3/4 cup sugar and 1 tsp cinnamon in another bowl and set aside.
Take muffins out, and while they’re still hot, dip in melted margarine and then roll in cinnamon sugar mixture.
