Apple Raisin Pecan Muffins

I love making muffins and putting in them whatever I feel like at that moment!  Here is what I felt like today…

3 cups flour
1/4 cup wheat germ
1/4 cup bran
5 tsp baking powder
1 tsp salt
1½ cups milk
2 eggs
1/3 cup oil
1/3 cup sour cream
1 cup sugar
1 tsp vanilla
1 chopped apple
1 cup raisins
1 cup chopped pecans

Preheat oven to 400°.   Mix together flour, wheat germ, bran (can substitute flour for the wheat germ and bran, it just sounded healthy at the time), baking powder, and salt, set aside.

Stir together milk, eggs, oil, sour cream, sugar (I use sugar substitute sometimes for less calories and no sugar), and vanilla.  Pour into dry ingredients and stir just until combined.  Fold in apple, raisins, and pecans.

Drop batter into sprayed muffin cups, fill to top of cup.  This makes 12 large muffins.  Bake for 20-22 minutes.
