When I saw these in the store I just had to buy them, Guittard Smooth Melty Petite Mint Chips. Here is what I did with them.
1 cup butter, softened
1¼ cups sugar
2 egg whites
2¼ cups flour
1 tsp vanilla powder
1 tsp baking soda
1/2 tsp salt
1 bag Guittard Smooth Melty Petite Mint Chips
Preheat oven to 350°, lightly grease cookie sheets. Cream butter and sugar with electric mixer. Add egg whites, mix thoroughly. Add flour, vanilla powder, baking soda, and salt, mix well. Stir in mint chips. Roll small scoops of dough in powdered sugar and place on cookie sheets. Bake 8 minutes.
