Strawberry Milkshake Mini Cakes

I love using my Demarle Round Mold for mini cakes, I also have a lot of Strawberry Milkshake Whoppers left over from the dessert table at my daughter’s wedding.  I made a scratch cake batter adding Strawberry Quik and made pink buttercream frosting and put it all together, this is what you get…

                       


1/2 cup white sugar
1/4 cup butter
1 egg
1 tsp vanilla
1 cup flour
1/4 cup Strawberry Quik
1 tsp baking powder
1/2 cup milk

Strawberry Milkshake Whoppers

Preheat oven to 350°.  Place Demarle round tray on perforated baking sheet.

In a medium bowl with electric mixer, cream sugar and butter.  Beat in egg and vanilla.  Combine flour, Strawberry Quik, baking powder, and salt.  Add flour mixture to creamed mixture alternately with milk, mix well.  Evenly distribute batter among four round molds (about 1/2 cup each, put small amount of water in the 2 unused rounds).

Bake for 18 to 20 minutes, test with pick in center.  Cool completely, can remove from pan to cooling rack after 15 minutes.  With serrated knife, slice off dome of cake layers to make flat tops.  Place one cake layer on plate, frost with layer of frosting, cake layer on top and frost sides and top.  Decorate with Strawberry Milkshake Whoppers.  Makes 2 mini layer cakes.
