Chocolate Oat Snack Cake

This recipe comes from tasteofhome.com, I made just a couple changes.  It is a new favorite!  So moist and fudgy.  The computer is telling me fudgy is not a word…but I still say this cake tastes so fudgy.  So easy with incredibly delicious results.

1 cup old fashioned oats
1¾ cups boiling water
1/2 cup butter, softened
1 cup sugar
1 cup brown sugar
2 eggs
1¾ cups flour
2 heaping Tbl dark cocoa
1 tsp baking soda
1/2 tsp salt
1 cup semi-sweet chocolate chips, divided
1 cup dark chocolate chips, divided
1 cup chopped walnuts

Preheat oven to 350°.  In medium bowl, pour boiling water over oats, let stand for 10 minutes.  In large bowl with electric mixer, cream butter and sugar, and brown sugar.  Add eggs, beat well.  Beat in oat mixture.  Combine flour, cocoa, baking soda and salt, gradually add to creamed mixture.  Stir in 1/2 cup of semi-sweet chips and 1/2 cup of dark chocolate chips.

Pour into sprayed 13x 9 baking pan.  Sprinkle with walnuts and remaining chips.  Bake at 350° for 40-45 minutes or until a toothpick comes out clean.  Cool on a wire rack.

  1. How do you take the cake out of the pan? I tried inverting it and made a mess.
Next time I may either cool and cut in the pan or make a tin-foil sling to lift the cake out of pan.

    • Hi Mike, I frost it, cut it and serve it from the pan. Hope it tasted good, it’s a favorite of mine. Of course, it’s chocolate! Thanks for visiting!
