It’s important to support the Girl Scouts and buy cookies, so I have quite a few boxes at my house. I don’t really care to eat them, if I am going to have the calories I would rather have a homemade cookie. So, this is a homemade cookie with chopped up Girl Scout Samoas. I believe they are calories well spent!
1 cup butter, softened
3/4 cup brown sugar
1/2 cup sugar
2 tsp vanilla
2 cups flour
1/3 cup cocoa
1 tsp baking soda
1/2 tsp salt
1 box Girl Scout Samoas, chopped
1 cup semi-sweet chocolate chips
1/2 cup shredded coconut
Preheat oven to 375°. Cream butter, brown sugar, and sugar. Add egg and vanilla, mix well. Add flour, cocoa, baking soda, and salt, mix until all combined. Stir in Samoas, chocolate chips, and coconut. Drop scoopfuls onto silpat lined tray or lightly sprayed cookie sheet. Bake for 9 minutes. Do not overbake, 9 minutes makes the perfect chewy, fudgy cookie.
