Chocolate Chocolate Chip Cookie Dough Cupcakes

If you search on the internet there are many different fun versions of chocolate chip cookie dough cupcakes.  Here is my version…


Chocolate Cupcakes:
3/4 cup dark chocolate chips, melted in microwave
1½ cups flour
1 cup sugar
1/4 cup cocoa
1 tsp baking soda
1/4 tsp salt
1/2 cup buttermilk
1 egg
1/2 cup oil
2 tsp vanilla

Preheat oven to 350°.  Put 12 cupcake papers in 12 cup pan.  Melt dark chocolate chips, set aside to cool.  In medium bowl stir together flour, sugar, cocoa, baking soda, and salt.  In large bowl with electric mixer, mix buttermilk, egg, oil, and vanilla.  Mix in melted chocolate.  Mix in dry ingredients, it is a fairly thick batter, brownie-like.  Divide batter evenly between cupcake cups in pan.  Bake for 18-20 minutes, until center is set.  Cool in pan a few minutes then transfer to wire rack, cool completely.

Chocolate Chip Cookie Dough Filling:
2 Tbl butter, softened
2 Tbl sugar
2 Tbl brown sugar
1 tsp milk
1/2 tsp vanilla
1/4 cup flour
1/3 cup mini chocolate chips

Cream butter, sugar, brown sugar, milk, and vanilla.  Add flour and mini chocolate chips, mix well.  Divide evenly into 12 portions (ball or cube, don’t know why I made cubes).  Make small hole in center of each cupcake (you just may have to eat that part…what else are you going to do with it?).  Place a ball (or cube) of cookie dough in each cupcake hole.  Ready to frost.

Buttercream Frosting:
6 Tbl butter, softened
3½ cups powdered sugar
3-4 Tbl milk
1 tsp vanilla

Whip butter, powdered sugar, milk, and vanilla with electric mixer to make perfect frosting consistency.  Pipe onto cupcakes and decorate with small chocolate chip cookies and mini chocolate chips if desired.
