Do you have frozen yogurt stores where you live? My husband and I love to go to Yogurtland. Some nights we have “Yogurt Dinner”, yes, it is what we have for dinner. Many different flavor choices and lots of fun toppings to choose from. One topping that is always on my frozen yogurt is coconut, I love coconut! Chewy and deliciously sweet! With that love of coconut in mind, I made these coconut chocolate chip cookies. Three cups of coconut does the trick, chewy, chocolate, delicious!
1 cup butter, softened
1¾ cups sugar
1 egg
2 tsp vanilla
2 cups flour
1 tsp baking soda
1/2 tsp salt
3 cups coconut
2 cups semi sweet chocolate chips
Preheat oven to 375°. With electric mixer, cream butter and sugar. Add egg and vanilla; mix well. Add flour, baking soda, and salt, mix until well combined. Stir in coconut and chocolate chips. Drop by scoopfuls onto Silpat lined baking sheet or cookie sheet. Bake 9-10 minutes or until lightly browned.
