Red Velvet Brownie Cake

This is a combination of a brownie layer, red velvet layer, and my favorite fudgy frosting. Probably best served with a giant scoop of vanilla ice cream!

Red Velvet Brownie Cake

Brownie Layer:
1/2 cup butter, very soft
1 cup sugar
3 eggs
1 tsp vanilla
1/2 cup flour
6 Tbl unsweetened cocoa
1/4 tsp salt

Preheat oven to 350°. In bowl mixing by hand, cream butter and sugar. Add eggs and vanilla, mix well. Add flour, cocoa, and salt; mix just until combined. Spread in sprayed 13″x9″ baking pan.

Red Velvet Layer:
3 Tbl butter, very soft
1 cup sugar
2 eggs
1 Tbl unsweetened cocoa
1 Tbl red food color
1/2 cup milk
1 tsp vanilla
1¾ cup flour
1/4 tsp salt
2 tsp vinegar
1 tsp baking soda

In bowl with electric mixer, cream butter and sugar. Add eggs and mix well. In small bowl, make a paste with the cocoa and red food color; mix into creamed mixture. Add flour, salt, milk, and vanilla; mix well. In small bowl, add baking soda to vinegar; add to batter and mix well. Spoon red velvet batter over brownie batter in baking pan, gently spread evenly to completely cover. Bake 30-35 minutes until center is done. Cool completely.

Fudge Frosting:
6 Tbl butter
6 Tbl milk
1½ cup sugar
1 cup semi-sweet chocolate chips
1 tsp vanilla

In saucepan over medium heat, combine butter, milk, and sugar. Bring to boil. Boil for 30 seconds and remove from heat. Stir in chocolate chips and vanilla; stir until chocolate chips are melted and frosting is smooth. Spread evenly over cake, a thick layer. Frosting will set up nicely in a wonderful fudge layer!

Brown Sugar Pound Cake

This is a winner! Moist, flavorful, beautiful, tall bundt cake with toffee bits, pecan pieces, and caramel sauce. This cake might almost make you forget about chocolate!

Brown Sugar Pound Cake:
1½ cups butter, softened
2 cups brown sugar
1 cup sugar
5 eggs
1 cup whole milk
3 cups flour
1 tsp baking powder
1/2 tsp salt
1 (8 oz) pkg toffee bits
1 cup chopped pecans

Preheat oven to 325°. Spray bundt pan with nonstick spray and sprinkle with flour. In large bowl of mixer, cream butter, brown sugar, and sugar. Mix in eggs one at a time. In medium bowl, stir together flour, baking powder, and salt. Add dry ingredients alternately with milk, mix until well combined. Mix in toffee bits and pecans. Spoon batter into prepared pan. Bake 75-85 minutes, until pick inserted in center comes out clean (I had to bake mine about 90 min). Cover cake during baking if starts to get too brown. Cool cake in pan 30 minutes. Remove cake from pan and cool completely on wire rack. Put cake on serving plate and drizzle with caramel sauce. Cake recipe from ladybehindthecurtain.com.

Caramel Sauce:
1 (14 oz) can sweetened condensed milk
1 cup brown sugar
2 Tbl butter
1/2 tsp vanilla

Combine sweetened condensed milk and brown sugar in saucepan. Bring to boil over medium-high heat whisking constantly. Remove from heat, add butter and vanilla. Drizzle sauce over cake while it is warm, it thickens as it cools.

Making a single serving is a good idea for me because I cannot be left alone with baked goods. If I make a whole coffee cake, chances are I will eat a whole coffee cake. So, one serving, it’s gone, no willpower needed. Ü

Single Serve Cinnamon Coffee Cake

Cinnamon Streusel Topping:
2 Tbl flour
1 Tbl brown sugar
1/2 tsp cinnamon
1 Tbl butter, softened

In a small bowl, mix together flour, brown sugar, and cinnamon. Mix in butter with a fork until crumbly. Set aside.

Cake:
1 Tbl butter, softened
2 Tbl sugar
1/2 of 1 beaten egg (approx 2 Tbl)
2 Tbl sour cream
drop vanilla
1/4 cup flour
1/8 tsp baking powder

In a mug, mix butter and sugar. Stir in egg (save the other half an egg for your coffee cake tomorrow!), sour cream, and vanilla. Add flour and baking powder and mix just until combined. Pour streusel topping mixture over cake batter. Microwave for 1 minutes, then at 10 second intervals until done; about 1:20 to 1:30 is about right. Cake will be hot! Stir lightly with a fork to let some heat out and distribute the streusel.

Glazed Apple Crumb Cake

Crumb Topping:
1/2 cup flour
1/2 cup brown sugar
2 tsp cinnamon
1/4 tsp salt
1/4 cup butter, cold

Cake:
1½ cups flour
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
2/3 cup oil
3/4 cup brown sugar
1/4 cup sugar
1 egg
1 egg white
1 tsp vanilla
1 large apple, peeled, cored, and diced
1/2 cup chopped walnuts

Warm Vanilla Glaze:
1½ Tbl butter, melted
1½ Tbl brown sugar
1½ Tbl sugar
1½ Tbl milk
1/4 tsp vanilla
3/4 cup powdered sugar

Preheat oven to 350°. Make topping by mixing flour, brown sugar, cinnamon, and salt. Cut in butter until crumbly, set aside.

For the cake batter, in large bowl stir together flour baking soda, cinnamon, nutmeg, and salt. In a medium bowl whisk together oil, brown sugar, sugar, egg, egg white, and vanilla. Stir liquid mixture into dry ingredients just until combined. Fold in apple and walnuts. Spread cake batter in well sprayed 9″x9″ baking pan. Sprinkle crumb topping evenly over cake batter, press down. Bake 30-35 minutes, until done in center.

For the glaze, in small bowl, whisk together melted butter, brown sugar, sugar, milk, and vanilla. Add powdered sugar and whisk until just combined. Drizzle over cake. Enjoy cake warm or room temperature.

Cinnamon Sugar Sheet Cake

Cinnamon Sugar Sheet Cake…say that five times fast! It’s my daughter Rachel’s birthday and she is far away from me in another state. The only way I know to feel better about that situation (without getting on a plane), is to bake a cake.

Cinnamon Sugar Sheet Cake

Cake:
1 cup butter
1 cup water
2 cups sugar
2¼ cups flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1/4 tsp nutmeg
2 eggs
1 tsp vanilla
1/2 cup sour cream

Preheat oven to 375°, spray 12’x17″ sheet pan. In large microwave proof bowl, heat butter and water for about 2½-3 minutes on 50% power in the microwave; whisk until butter is melted. Add sugar, flour, baking soda, cinnamon, salt, and nutmeg; whisk until smooth. Add eggs, vanilla, and sour cream. Whisk until well combined and smooth batter. Pour batter into prepared pan. Bake 20-25 minutes, test center with pick. Make frosting right before cake is baked.

Frosting:
1/2 cup butter
6 Tbl milk
4 cups powdered sugar
1 tsp vanilla
cinnamon sugar
crystal sugar

In saucepan, heat butter and milk to melt butter and just after mixture starts to boil remove from heat. Whisk in powdered sugar and vanilla. Spread evenly over warm cake. Sprinkle cinnamon sugar and crystal sugar evenly over frosting. Garnish with chopped pecans, walnuts, sprinkles, white chocolate curls, if desired.

Vanilla Malt Cake

This is a big twist on a recipe I posted last year for Dark Chocolate Snack Cake. I made substitutions and this moist, tasty Vanilla Malt Cake was born. It was a friend’s birthday and I wanted to take her some cake…and that’s the story! Yummy ending.

Vanilla Malt Cake 2

Cake:
2 cups flour
2 cups sugar
1 tsp baking soda
1/2 tsp salt
1/4 cup Carnation Malted Milk powder
1½ cups mini marshmallows
1 cup water
1/2 cup oil
1/2 cup butter
2 eggs, beaten
1/2 cup buttermilk
1½ tsp vanilla

Preheat oven to 350°. In large bowl, stir together flour, sugar, baking soda, salt, and Malted Milk powder. Stir in marshmallows; set aside. In small saucepan, bring water, oil, and butter to boil. Pour over flour mixture and mix well to melt marshmallows. Stir together eggs, buttermilk, and vanilla; beat into batter. Pour into sprayed 9″x13″ baking pan. Bake for 38-40 minutes or until done in center. Cool.

Frosting:
1/2 cup butter, softened
3 Tbl Carnation Malted Milk powder
3 cups powdered sugar
1½ tsp vanilla
3 Tbl milk

Whip butter with electric mixer until light and fluffy. Add Malted Milk powder, powdered sugar, vanilla, and milk; whip until creamy. Spread evenly over completely cooled cake. Sprinkle with chopped nuts, sprinkles or other garnish.

Nutter Butter Snack Cake

For all the peanut butter fans out there in the world…a Nutter Butter, peanut buttery treat!
Nutter Butter Snack Cake

1 (15.25 oz) white cake mix
1¼ cups milk
1/3 cup oil
2 eggs
14 Nutter Butter cookies, chopped
1/4 cup creamy peanut butter (optional for topping)

Preheat oven to 350°. In large bowl, combine cake mix, milk, oil, and eggs. Mix with electric mixer, mix on low speed until combined and on medium speed for 2 minutes. Mix in chopped Nutter Butter cookies. Pour into well sprayed bundt pan. Bake for 40-42 minutes. Cool in pan for 10 minutes, turn out onto cooling rack to cool completely. Heat peanut butter in microwave to melt, drizzle over top of cake, and sprinkle with powdered sugar. To go all out, drizzle chocolate over the peanut butter!

Double Chocolate Cake Doughnuts

I am calling these little cuties healthy doughnut because they are baked and not deep fried. Maybe healthier is better?

Double Chocolate Cake Doughnuts

Double Chocolate Cake Doughnuts 2

Chocolate Doughnuts:
1 cup flour
1/4 cup unsweetened cocoa powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup brown sugar
1/2 cup buttermilk
1 egg
4 Tbl butter, melted
1 tsp vanilla

Chocolate Glaze:
1 Tbl butter, melted
1 1/4 cup powdered sugar
3 Tbl unsweetened cocoa powder
pinch salt
3 to 4 Tbl milk
2 tsp vanilla
color jimmies

Place rack in the upper third of the oven and preheat oven to 325°.  Spray doughnut baking pan with nonstick cooking spray and set aside.

For the doughnuts: In a medium bowl, whisk together flour, cocoa powder, baking soda, salt, and brown sugar. In a small bowl, whisk together buttermilk, egg, melted butter, and vanilla until thoroughly combined. Pour wet ingredients into dry ingredients and fold together until all ingredients are well combined. Scoop batter into prepared doughnut baking pan. Each doughnut mold should be about two-thirds full. Bake doughnuts 11 to 13 minutes or until skewer inserted comes out clean. Remove from oven and allow doughnuts to rest five minutes before inverting onto wire rack to cool completely before glazing. Repeat baking process with remaining batter.

For the glaze: In a medium bowl whisk together butter, powdered sugar, cocoa powder, and salt.  Add 2 tablespoons of milk and vanilla.  Whisk to combine. Mixture may be thick. Add milk, a tablespoon at a time, until glaze is thick but still pourable. Dip each doughnut into chocolate glaze.  Shake off some of the excess glaze. Return to wire rack and sprinkle with color jimmies.  Allow to rest for the frosting to harden slightly. Makes 8-10 doughnuts, depends on how full you fill the molds and how much batter you eat!

Dark Chocolate Heaven Cake

I am of the belief that you can never have too much chocolate, so this is heavenly to me. Chocolate Chocolate and more chocolate! You might need a glass of milk!

Dark Chocolate Heaven Cake

Dark Chocolate Cake:
3/4 cup unsweetened dark chocolate cocoa
1½ cups boiling water
2¼ cups flour
1½ tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
3/4 cup butter, softened
1½ cups sugar
3 eggs
1 tsp vanilla

Preheat oven to 350°. Spray two 9″ round cake pans and sprinkle with flour. Put cocoa in medium bowl, pour boiling water over, and whisk until smooth. Let mixture cool. Stir together flour, baking soda, baking powder and salt in separate bowl; set aside.

In large bowl with electric mixer, cream butter and sugar until light and fluffy. Beat in eggs one at time, then vanilla. Add flour mixture alternately with cocoa mixture. Divide batter evenly between the two prepared pans. Bake 25 to 28 minutes. Cool completely.

Chocolate Cream Filling:
2 1/2 Tbl flour
2 Tbl unsweetened dark cocoa
1/2 cup half-and-half
1/2 cup butter, softened
1/2 cup powdered sugar
1/2 tsp vanilla

Whisk together flour, cocoa, and half-and-half in small saucepan. Cook over medium heat, whisking constantly, 5 minutes or until thickened. Spoon mixture into small bowl; cover surface with plastic wrap, pressing wrap onto surface, and let stand 30 minutes or until cool.

Beat butter and powdered sugar with electric mixer until light and fluffy. Gradually add cooled cocoa mixture, 1 tablespoon at a time, beating until blended after each addition. Add vanilla, beating until mixture is consistency of whipped cream. Spread evenly on top of one layer of the cake (cut horizontally across top of cake if there is too much of a dome). Place second layer on top. Cover and place in refrigerator while making the frosting.

Dark Chocolate Buttercream Frosting:
1 cup butter, softened
3½ cups powdered sugar
1/2 cup unsweetened dark cocoa
4-5 Tbl half-and-half

Whip butter with electric mixer until light in color and creamy. Mix in powdered sugar, cocoa, and enough half-and-half to make your perfect frosting consistency. Whip thoroughly to make it light and creamy. Frost top and sides of cake.
