Glazed Apple Crumb Cake

Crumb Topping:
1/2 cup flour
1/2 cup brown sugar
2 tsp cinnamon
1/4 tsp salt
1/4 cup butter, cold

Cake:
1½ cups flour
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
2/3 cup oil
3/4 cup brown sugar
1/4 cup sugar
1 egg
1 egg white
1 tsp vanilla
1 large apple, peeled, cored, and diced
1/2 cup chopped walnuts

Warm Vanilla Glaze:
1½ Tbl butter, melted
1½ Tbl brown sugar
1½ Tbl sugar
1½ Tbl milk
1/4 tsp vanilla
3/4 cup powdered sugar

Preheat oven to 350°. Make topping by mixing flour, brown sugar, cinnamon, and salt. Cut in butter until crumbly, set aside.

For the cake batter, in large bowl stir together flour baking soda, cinnamon, nutmeg, and salt. In a medium bowl whisk together oil, brown sugar, sugar, egg, egg white, and vanilla. Stir liquid mixture into dry ingredients just until combined. Fold in apple and walnuts. Spread cake batter in well sprayed 9″x9″ baking pan. Sprinkle crumb topping evenly over cake batter, press down. Bake 30-35 minutes, until done in center.

For the glaze, in small bowl, whisk together melted butter, brown sugar, sugar, milk, and vanilla. Add powdered sugar and whisk until just combined. Drizzle over cake. Enjoy cake warm or room temperature.

Graham Cracker Chocolate Chips Muffins

I am always on the look out for new muffin recipes, they are a perfect package of bread with some element of flavor.  No, it’s not cake, I can feel good about eating a muffin, right?  No guilt.  Maybe I’m fooling myself, but I do love muffins.  These muffins are a variation of a recipe from tastykitchen.com.  They were a hit with the Fam.

                       

Graham Cracker Chocolate Chip Muffins:
2 cups flour
1 Tbl baking powder
1/2 tsp salt
3/4 cup sugar
1 cup graham cracker crumbs (OK to have chunks)
3/4 cup milk
1/2 cup sour cream
1/3 cup oil
1 egg
2 tsp vanilla
3/4 cup chocolate chips

Graham Cracker Crumb Topping:
1/4 cup flour
1/4 cup brown sugar
1/4 cup graham cracker crumbs
1/4 cup chopped walnuts
1/2 tsp cinnamon
3 Tbl butter

Preheat oven to 400º.  Line 12 muffin cups with liners or spray with cooking spray or use Demarle muffin tray (no prep necessary), set aside.  In large bowl whisk flour, baking powder, salt, sugar, and graham cracker crumbs until blended. Set aside.  In medium bowl, beat milk, sour cream, oil, egg, and vanilla.  Stirring by hand, add milk mixture to dry ingredients and mix until just combined.  Fold in chocolate chips.  Using large scoop, divide batter evenly into the 12 muffin cups, about 2/3 full.  For topping, mix flour, brown sugar, graham cracker crumbs, walnut, and cinnamon.  Add melted butter and mix until crumbly and looking like wet sand.  Sprinkle 1 heaping tablespoon of crumb topping over each muffin cup of batter.  Bake for 18-20 minutes or until a toothpick inserted into the middle comes out clean.

Fresh Strawberry Crumb Cake

This was supposed to be breakfast this morning.  I did not use my time wisely, so I only had a bite before running out the door to be on time for church.  What a lovely thing to come home to…for lunch!  Yes, this was lunch today, yum.

                       

Cake:
1/2 cup butter, softened almost melted
2/3 cup sugar
2 eggs
1 tsp vanilla
1½ cups flour
1 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1 cup sour cream
1/4 cup strawberry preserves
1 cup small diced/sliced fresh strawberries

Preheat oven to 350°.  In large bowl cream butter and sugar by hand.  Mix in eggs and vanilla.  Stir together flour, baking soda, salt, cinnamon, and nutmeg.  Gently stir dry ingredients into creamed mixture alternately with sour cream, just until blended.  Spread half of cake batter in a sprayed 9″x9″ baking pan.  Mix strawberry preserves and fresh strawberries.  Spoon over batter in pan and gently spread.  Spoon remaining batter over strawberry mixture and gently spread.  Mix crumb topping…

3 Tbl flour
1/4 cup finely chopped walnuts

In a small bowl, mix butter, brown sugar, flour, and chopped nuts.  Crumble topping evenly over cake batter.  Bake for 30-35 minutes until golden brown.

Peach Cobbler Muffins

Oh how I love muffins, a perfect yummy package!  Especially with sweet peaches and a crunchy, buttery crumb topping.

                       

1½ cups flour
2 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 cup butter, softened
2/3 cup sugar
1/4 cup oil
1 egg
1/2 cup buttermilk
2 tsp vanilla
1 cup chopped fresh or frozen peaches

Preheat oven to 350°.  Place 6 cup muffin tray on perforated sheet, or spray 6 muffin cup pan with non-stick spray.  In large bowl whisk together flour, baking powder, salt, cinnamon, and nutmeg, set aside.  In medium bowl cream butter and sugar.  Mix in oil, egg, buttermilk, and vanilla.  Add wet ingredients to dry ingredients and mix just until combined.  Fold in peaches.  Scoop batter into prepared pan. 3 Tbl flour
3 Tbl brown sugar
1/4 tsp cinnamon
2 Tbl butter, cold

In small bowl stir together flour, brown sugar, and cinnamon.  Cut cold butter into mixture to make coarse crumbs.  Scoop rounded tablespoon of mixture onto batter in each muffin cup.  Bake for 26-30 minutes until center is set.  Cool in pan for 15 minutes, remove to wire rack to finish cooling.
