Zucchini Crust Personal Pizza

I saw a picture on Pinterest which lead me to make this recipe. The site that Pinterest directs you to is kalynskitchen.com and she makes an all zucchini crust and it looks delicious. I love the idea of incorporating zucchini into the crust, I just still want the bread too. So, this is my version, thanks Kalyn for the delicious idea. This has become one of our favorite dinners.

Zucchini Crust:
2 cups grated zucchini
2 Tbl water

In microwave safe dish, put grated zucchini and 2 Tbl water. Cover with plastic wrap and microwave 2 minutes. Cool while making the dough.

1/3 cup warm water (110°)
1 tsp dry yeast
1 tsp sugar
1 Tbl olive oil
1 cup flour
1/2 tsp seasoning salt

Add warm water to bowl, sprinkle yeast over water, and sprinkle sugar over yeast. Let sit until foamy. Add olive oil, flour, and salt. Stir just until combined. Drain and squeeze water from cooked zucchini, add to dough and stir just enough to combined. Let rest for 10 minutes.

Preheat oven to 500°. Turn zucchini dough out onto well floured surface, coat with flour, and cut in half. Working with one half and adding more flour as necessary, press into a circle. Place on baking sheet lined with silpat and sprinkled with cornmeal or sprayed with nonstick spray and cornmeal. Press out so the circle fills half of baking sheet. Repeat with other half of dough. Let rest for about 15 minutes. Bake crust for 5-8 minutes. Remove from oven, spread with sauce, cheese, and desired toppings. Return to oven for another 5-10 minutes, or until crust is golden brown and cheese is melted.

OREO Sweet Rolls

For Father’s Day at our church each year, the fathers are treated to homemade cinnamon rolls. They are always a big hit. I love making sweet rolls/cinnamon rolls, you don’t have to look very far into my website to see that I love wrapping all kinds of ingredients and flavors up in dough. Here is my latest take on sweet rolls…Oreo Sweet Rolls.

Oreo Sweet Rolls

Sweet Roll Dough:
1 cup milk
1/3 cup butter
1 pkg (2¼ tsp) dry yeast
1/2 cup sugar
4½ – 5 cups flour
1 tsp salt
3 eggs
1½ tsp vanilla

Heat milk and butter in microwave until butter is melted and reaches 110°. In bowl of mixer, sprinkle yeast over milk mixture. When yeast is foamy, add sugar, 3 cups of flour, salt, eggs, and vanilla. Mix until well combined. Add remaining flour, 1/2 cup at a time, stirring well after each addition. When dough has pulled together knead until smooth. Place dough in a sprayed bowl and turn to coat, cover and let rise in warm place until doubled, about 1 hour. Roll out dough on lightly floured surface into a 12″x 18″ rectangle. Mix up filling.

Oreo Filling:
14 Oreos
6 Tbl butter, melted

Process Oreos or crush to fine crumbs. Stir melted butter into oreo crumbs until well combined. Evenly spread over dough. Roll up the dough into a log and seal the seam. Cut into 12 equal pieces, place in a greased 9″x13″ baking pan. Cover and let rise about 1/2 hour. Preheat oven to 375° and bake for 25-30 minutes. Spread with frosting when warm.

Sweet Roll Frosting:
1/4 cup butter, softened
1 cup powdered sugar
milk

Mix butter and powdered sugar. Add enough milk to make frosting consistency. Evenly spread frosting over rolls, sprinkle with Oreo crumbs if desired.

Peasant Bread

This bread is so easy. No mixer needed, you mix it the old fashioned way, a bowl and large spoon. Well, I used a large rubber spatula. No kneading, just mix well and let rise. You bake it in two oven proof glass bowls, like Pyrex. I will tell you a couple of things about me…when I am making bread I have a hard time letting it rise for a full hour. I usually fudge and hurry things along as long as it looks like it has risen enough. This bread dough rises fast, first rise only needed about 30 minutes. Then, put in the two bowls and second rise only took about 20 minutes…perfect for an impatient person. The other thing I will divulge, I love to do dishes. There you have it, a little strange! But, this is really good bread. Recipe from alexandracooks.com.

2 cups warm water (110°)
2¼ tsp (1 pkt) dry yeast
1 Tbl sugar
4 cups flour
2 tsp salt
2 Tbl butter, softened

In small bowl sprinkle yeast over warm water. Sprinkle sugar over yeast. Let sit for 10 minutes. In large bowl stir together flour and salt. Pour yeast mixture over flour and stir until well combined. Turn out into well greased bowl, cover and let rise for 30-60 minutes (until doubled in size). I turn my oven on for a minute then turn it off and place the dough in the warm oven to rise. Butter two oven-proof bowls very well, I used a 1L (6 cup) Pyrex bowl and a 4 cup liquid measure Pyrex. Divide bread dough in half and scoop into the two prepared glass bowls. Let rise again, about 30 minutes or until almost up to the rim of the bowls. Preheat oven to 425°. Bake for 10 minutes, then reduce heat to 375° and continue baking to 22-25 minutes longer. Turn bread out onto cooling rack.
