Strawberry Malt Cookies

It has been cookies madness! For my daughter’s wedding reception, she wanted to serve milk and cookies. Here is one of the many, Strawberry Malt Cookies.

Strawberry Malt Cookies

1 cup butter, softened
1/2 cup sugar
1/2 cup brown sugar
1/4 cup Nestle Strawberry Nesquik
1 egg
1 tsp vanilla
10 drops red food color
2½ cups flour
1 tsp baking soda
1/2 tsp salt
2 Tbl Carnation Malted Milk powder
2 cups white baking chips

Preheat oven to 325°.  In large bowl with electric mixer, cream butter, sugar, brown sugar, and strawberry Nesquik.  Add egg, vanilla, and red food color, mix well.  Stir together flour, baking soda, salt, and malted milk powder, add to creamed mixture and mix until combined.  Stir in white chips.  Drop rounded scoops on Silpat lined baking sheet or lightly sprayed cookies sheet and bake 10-11 minutes, just until center is set and not turning brown.  Cool on baking sheet for 5 minutes, then cool on wire rack.

Double Frosted Milk Chocolate Malt Cookies

Here is another double frosted cookie creation.  A milk chocolate malt cookie with malt buttercream frosting topped off with creamy milk chocolate frosting.  Because it is Mother’s Day, I gave myself a break and only made the malt buttercream from scratch and went with Betty Crocker for the milk chocolate frosting.  Some days it’s all about making life easier and giving yourself time to sit down a minute, and still having a great tasting cookie to eat!

                       

Milk Chocolate Malt Cookies:
1 cup butter, softened
1/2cup sugar
3/4 cup brown sugar
1 egg
1 tsp vanilla
1 (11.5 oz) bag milk chocolate chips, divided
2¼ cups flour
1/4 cup malted milk powder
1 tsp baking soda
1/2 tsp salt

Preheat oven to 375°.  In large bowl, cream butter, sugar, and brown sugar.  Add egg and vanilla.  In small bowl, microwave about 2/3 cup of the milk chocolate chips at 50% power, just until melted, mix into batter.  Add flour, malted milk powder, baking soda, and salt.  Stir in remaining milk chocolate chips.  Drop by cookie scoop onto cookie sheet and gently press cookie dough balls with bottom of a glass dipped in sugar, to about 2″ diameter.  Bake 8 minutes, do not over bake.  Cool on cookie sheet until set, about 2 minutes, remove to wire rack.  Cool completely before frosting.

Malt Buttercream:
1/2 cup butter, softened
1/4 cup shortening
2¼ cups powdered sugar
1/2 cup malted milk powder
4 Tbl cream

Mix all ingredients with electric mixer until smooth.  Frost cooled cookies with thin layer of malt buttercream frosting.

Frost second layer of frosting on cookies with your favorite milk chocolate frosting, or I used store bought (easier and still delicious).  I microwaved the plastic tub of milk chocolate frosting at 50% for a few seconds to thin it a bit (careful…just a little bit).  Makes about 3 dozen cookies.

Chocolate Malt Brownies with Vanilla Malt Buttercream

Growing up I loved adding Nestle Quik and Carnation Malted Milk powder to my milk, even better, making a chocolate malt milkshake!  So, thinking of chocolate malt and brownies this is my latest baking brainchild.

  
Chocolate Malt Brownies:
1 2/3 cups sugar
3/4 cup butter, melted
2 Tbl water
3 eggs, beaten
2 tsp vanilla
1 cup flour
1/2 cup malt powder
3/4 cup baking cocoa (I used half reg. and half special dark)
1/2 tsp baking powder
1/4 tsp salt
1½ cups chopped walnuts, divided
1½ cups coarsely chopped Whoppers(5 oz box), divided

Preheat oven to 350°.  Spray a 13×9 inch pan with nonstick spray.  In large bowl, stir togetherby hand, sugar, butter, and water.  Beat in eggs and vanilla.  In a smaller bowl, stir together flour, malt powder, cocoa, baking powder, and salt, and stir into sugar/butter mixture.  Fold in 3/4 cup walnuts and 3/4 cup Whoppers.  Spread into prepared pan.  Bake for 22 to 25 minutes or until desired brownie doneness. Cool completely in pan.

Vanilla Malt Buttercream:
1/2 cup butter, softened
1/2 cup malt powder
1 tsp vanilla
2 cups powdered sugar
3 Tbl milk

With electric mixer, beat together butter, malt powder, vanilla, powdered sugar, and milk until fluffy.  Frost completely cooled brownies.  Sprinkle remaining 3/4 cup chopped walnuts and 3/4 cup chopped Whoppers over frosting.  Cut into bars.

Malted Milk Ball Chocolate Chip Cookies

Growing up I loved chocolate malt milkshakes.  It has been years since I have allowed myself to have one, probably a big mistake right?  Live a little.  I’ll put it on my bucket list.  If you search for cookie recipes with malt you will find a lot, so this is not a spectacular new idea, it’s just my way of doing it.  Don’t you love that about cooking/baking?  There is a science to mixing certain ingredients to attain a specific result (Alton Brown can tell you all about that).  But, is there a “right” way to make something?  I say no, there are lots of different ways and we figure out our own and go with it, that makes it fun and exciting.  This is basically my favorite cookie recipe with a few changes to take my taste buds back to the past.

Malted Milk Ball Chocolate Chip Cookies

1/2 cup butter, softened
1/2 cup butter flavor shortening
3/4 cup brown sugar
1/2 cup sugar
1 egg
1 tsp vanilla
2¼ cups flour
1/2 cup Ovaltine Chocolate Malt powder
1½ tsp baking soda
1/2 tsp salt
1 cup chopped malted milk balls
1 cup milk chocolate chips

Preheat oven to 375°.  Cream butter, shortening, brown sugar, and sugar.  Add egg and vanilla.  Mix together flour, Ovaltine chocolate malt powder, baking soda, and salt.  Add dry ingredients to creamed mixture.  Stir in chopped malted milk balls and milk chocolate chips.  Drop by cookie scoop onto cookies sheets and bake for 9-10 minutes.  Makes about 45 cookies.
