Peanut Butter Oatmeal M&M Cookies

One of my all time favorite cookies. Make a double batch and wrap some up to give to somebunny. ;o)

3/4 cup oats
1 cup flour
1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1/4 cup butter
1/4 cup peanut butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla
1 cup chocolate chips
M&Ms

Preheat oven to 350°. Stir together oats, flour, baking soda, baking powder, and salt. In another bowl, cream butter, peanut butter, sugar, and brown sugar with electric mixer. Add egg and vanilla, mix thoroughly. Add dry ingredients to creamed mixture, and mix just until combined. Stir in chocolate chips and about 1/2 cup M&Ms (save some for top of cookies). Drop large scoop of batter onto cookie sheet and press a couple M&Ms into each cookie mound. Bake for 9-10 minutes, do not overbake.

Peanut Butter M&M Candied Popcorn

Perfect for a Valentine’s Day treat for the people you love! Inspired by a recipe at crazyforcrust.com.

Peanut Butter M&M Candied Popcorn

Peanut Butter M&M Candied Popcorn 1

10 cups popped popcorn*
1½ cups M&Ms
1½ cups honey roasted peanuts
1 pkg (12 oz) white melting wafers*
1/4 cup creamy peanut butter

Line large baking sheet with Silpat, parchment, or wax paper. Place popcorn in large bowl, add peanuts and M&Ms; toss. Melt white wafers and peanut butter together in microwave safe bowl on high for 1½-2 minutes, stir every 30 seconds. When the wafers are barely melted and mixture is stirred together smooth, pour over popcorn mixture. Stir gently to cover all the mixture. Turn popcorn mixture out onto prepared baking sheet. Spread evenly and let harden. Break into pieces and place in bags or sealed container. *I used already popped kettle corn from a large bag I purchased at Costco, makes the recipe super fast! Of course freshly popped will work wonderfully. For the candy melts I used Ghirardelli White Melting Wafers.

Marshmallow Caramel Popcorn

Gather the family, pick a movie. This is going to be fun and delicious! Recipe from pincookie.com with M&M’s and sprinkles added.

Marshmallow Caramel Popcorn

12 cups popped popcorn
1/2 cup butter
1/2 cup brown sugar
10 large marshmallows (I added a few more)
M&Ms
Sprinkles/Jimmies

Put popped popcorn in extra large bowl, set aside. In large bowl, microwave butter and brown sugar 2 minutes. Stir in marshmallows, microwave 1½-2 minutes until marshmallows are melted and smooth. Pour marshmallow mixture over popcorn and stir until popcorn is evenly covered. Gently stir in M&Ms and sprinkles/jimmies, just until evenly distributed, not too much or M&Ms will start to melt.

Peanut M&M Pretzel Cookies

Sweet and salty is such a great combination and there is a nice crunch from the peanuts and pretzels.  Hope you like this colorful creation!

                       

3/4 cup butter, softened
1/4 cup creamy peanut butter
3/4 cup brown sugar
1/2 cup sugar
1 egg
2 tsp vanilla
1 Tbl milk
2½ cups flour
1 tsp baking soda
1/2 tsp salt
1 cup pretzel pieces
1 cup chopped Peanut M&M’s candy

Preheat oven to 375°.  Line baking sheet with Silpat or spray cookie sheet.  With electric mixer, cream butter, sugar, and brown sugar.  Mix in egg, vanilla, and milk.  Stir together flour, baking soda, and salt, mix into creamed mixture.  Stir in pretzel pieces and chopped M&M’s.  Drop by scoopfuls onto prepared baking sheet.  Bake for 8 minutes.

White Chocolate Easter Chex Mix

HAPPY EASTER!  After Easter Dinner, send your guests home with this delicious goodie bag.

                       

4 cups Rice Chex
4 cups Corn Chex
2 cups stick pretzels broken in half or thirds
1 (5 oz) can chow mein noodles
1 lb white chocolate
1 (12 oz) bag plain milk chocolate M&M’S

Stir together Rice Chex, Corn Chex, pretzels, and chow mein noodles.  Melt white chocolate slowly in microwave and pour over dry ingredients. Stir gently to coat.  Stir in M&M’s.  Pour out on Silpat or wax paper to dry.  Put in cello bags.

Valentine Chex Mix

I believe I ate my weight in Valentine Chex Mix today.  This is an easy recipe right from the Betty Crocker website.

9 cups Rice Chex Cereal (1 box)
1 cup white vanilla baking chips
1/2 cup creamy peanut butter
1/4 cup butter
2/3 cup powdered sugar
1/2 cup Valentine M&M’s (or more)
4 Tbl Valentine sprinkles

Place cereal in large bowl.  In small microwavable bowl, melt vanilla chips, peanut butter and butter uncovered on High 1 minute to 1 minute 30 seconds, stirring every 30 seconds, until melted and smooth.  Pour peanut butter mixture over cereal, gently stirring until evenly coated.

Place 1/2 of cereal mixture in 1-gallon food-storage plastic bag.  Add powdered sugar.  Seal bag; gently shake until well coated. Spread on waxed paper or foil; cool about 15 minutes.

Meanwhile, stir candies and sprinkles into remaining cereal mixture.  Spread on waxed paper or foil; cool about 15 minutes.

In serving bowl, mix both cereal mixtures.  Store in airtight container.

You can easily make a half recipe…I just decided I might as well use the whole box of Chex!
