Nutter Butter Snack Cake

For all the peanut butter fans out there in the world…a Nutter Butter, peanut buttery treat!
Nutter Butter Snack Cake

1 (15.25 oz) white cake mix
1¼ cups milk
1/3 cup oil
2 eggs
14 Nutter Butter cookies, chopped
1/4 cup creamy peanut butter (optional for topping)

Preheat oven to 350°. In large bowl, combine cake mix, milk, oil, and eggs. Mix with electric mixer, mix on low speed until combined and on medium speed for 2 minutes. Mix in chopped Nutter Butter cookies. Pour into well sprayed bundt pan. Bake for 40-42 minutes. Cool in pan for 10 minutes, turn out onto cooling rack to cool completely. Heat peanut butter in microwave to melt, drizzle over top of cake, and sprinkle with powdered sugar. To go all out, drizzle chocolate over the peanut butter!

Nutter Butter Blondies

A quick and easy sweet tooth fix or treat to take and share. Filled with Nutter Butter Bites and honey roasted peanuts, YUM!

Nutter Butter Blondies

1 cup butter, softened
1 cup sugar
1 cup brown sugar
2 eggs
2 tsp vanilla
2¼ cups flour
1 tsp baking powder
1/2 tsp salt
1 (8 oz) pkg Nutter Butter Bites
1 cup honey roasted peanuts

Preheat oven to 375°. Line a 9″x13″ baking pan with foil and spray with non-stick spray. In large bowl with electric mixer, cream butter, sugar, and brown sugar. Add eggs and vanilla, mix thoroughly. Stir together flour, baking powder, and salt; mix into creamed mixture. Add Nutter Butter Bites and peanuts, mix until well combined. Spread into prepared pan (hand sprayed with non-stick spray works great!). Bake 25-30 minutes, or until pick inserted in center comes out clean (barely, do not over bake). I lay a piece of foil over after about 15 minutes of baking to keep blondies from browning too much, I want them to stay blonde ;o). Cool completely. Remove from pan, lifting out with foil onto cutting board, peel foil off foil and cut into desired shape and size pieces.

Nutter Butter Chocolate Cake

A quote from a favorite movie at our house comes to mind, “Pile it high and deep Mrs. M” (What About Bob). In the scene Bob Wiley was talking about salad, here I am talking Nutter Butter Chocolate Cake! If you are a chocolate & peanut butter fan, please make this cake! Moist chocolate cake and creamy peanut butter frosting with Nutter Butter Cookies!

Nutter Butter Chocolate Cake

Chocolate Cake:
1¾ cups flour
3/4 cup unsweetened cocoa
2 cups sugar
1½ tsp baking powder
1½ tsp baking soda
1 tsp salt
1 cup buttermilk
1/2 cup oil
2 eggs
2 tsp vanilla
1 cup boiling water

Preheat oven to 350°. In large bowl, stir together flour, cocoa, sugar, baking powder, baking soda, and salt. In another bowl, stir together buttermilk, oil, eggs, and vanilla. Add buttermilk mixture to flour mixture and beat with electric mixer for at least 2 minutes. Add boiling water and mix until well incorporated. Batter will be thin. Pour into two 8″ or 9″ round cake pans liberally coated with non-stick spray (3 cups batter in each). Bake for 28-30 minutes or until pick inserted in center comes out clean. Cool completely before frosting.

Creamy Nutter Butter Frosting:
1/2 cup butter, melted
1/2 cup creamy peanut butter
2 cups powdered sugar
1 (8oz) Cool Whip, thawed
10 chopped Nutter Butter sandwich cookies

Combine melted butter and peanut butter. Mix in powdered sugar until fluffy.  Fold in Cool Whip until totally mixed into peanut butter mixture. Fold in chopped Nutter Butter cookies. Spread half the frosting over the first layer of cake, set second layer of cake over frosting and remaining frosting over the top of cake. Sprinkle more chopped Nutter Butter cookies and mini chocolate chips if desired.  Keep cake in refrigerator.

Caramel Filled Peanut Butter Brownies

My name is Kristen and I am a chocoholic. Today I needed something chocolate (well, everyday I need something chocolate), so this is it. Inspired by a recipe Caramel-Filled Brownies, this is my twist. I think you want one…

Caramel Filled Peanut Butter Brownies

1 pkg (18.25 oz) dark chocolate cake mix
1/2 cup butter, softened
1 cup evaporated milk, divided
1 pkg (8 oz) Nabisco Nutter Butter Bites, coarsely chopped, divided
1 pkg (8 oz) Reeses Peanut Butter Cup Minis
1 pkg (14oz) caramels, unwrapped

Preheat oven to 350°. With pastry blender or two knives, cut butter into cake mix until crumbly. Add 1/2 cup of evaporated milk and mix well to make brownie dough. Mix in half of the chopped Nutter Butter Bites (about 1 heaping cup). Press 2/3 of the dough into a sprayed 9″x13″ pan to make brownies base. Bake for 12 minutes, or until set, cool on wire rack about 10 minutes.

Melt caramels and remaining 1/2 cup evaporated milk together in microwave or in saucepan over low heat, stir until smooth. Set aside, to cool slightly.

Evenly sprinkle remaining chopped Nutter Butter Bites and Reeses Minis over baked brownie base. Pour melted caramel all over the top of Nutter Butters and Reeses Minis. Drop remaining brownie dough in little globs evenly over caramel. Bake for 15-18 minutes. Cool completely. Refrigerate a bit for easier cutting. Store at room temperature.

Nutter Butter Chocolate Chip Bars

Another take on peanut butter and chocolate, a very tasty one.  I know, because this is what I had for dinner.

                       

Nutter Butter Chocolate Chip Bars:
1 cup butter
3/4 cup cocoa powder
2 cups sugar
3 eggs
1½ tsp vanilla
1 cup flour
12 Nutter Butter cookies, chopped
1/2 cup mini chocolate chips chips

Preheat oven to 350°.  Put butter and cocoa in large glass bowl, microwave slowly until butter is melted.  Add sugar and hand mix until well mixed.  Stir in eggs and vanilla, mix well, do not use electric mixer.  Stir in flour.  Stir in cookies and chips.  Spread batter in 13″×9″ pan.  Mix peanut butter topping…

Peanut Butter Topping:
1/3 cup peanut butter
2 Tbl butter, softened
2 Tbl sugar
1 Tbl flour
1 egg
1/3 cup mini chocolate chips

Beat all ingredients together until smooth. Drop spoonfuls of peanut butter mixture over the brownie layer. Run a knife through to marble.  Bake for 30-35 minutes. Cool, and cut in squares.
