Sweet Roll Heaven!

When planning a family breakfast, is there any question that there should be homemade sweet rolls on the menu? To me it is one of the most wonderful comfort food there is, hot from the oven with a heavenly aroma hanging in the air. Here are some ideas for Easter breakfast or any morning.

If you’re not an early riser to start the recipe in the morning (how many of us are?) make them the night before up to the step where you put the rolls in the pan. Cover tightly with plastic wrap and put in the refrigerator. Take the rolls out in the morning, remove plastic wrap, cover with a towel and let sit for 1-1½ hours then bake as directed.

Happy New Year!

I hope you all had a wonderful Christmas and found joy in celebrating with family. We had all our children home from college and our home was filled with noise, fun, laughter, and of course food! Family is what it is all about. We are looking forward to this new year with our daughter’s wedding in March and more quality family time.

Strawberry Oreo Cupcakes

PINK is my favorite color and chocolate is my favorite taste!  So here is a very strawberry pink chocolate recipe, Strawberry Oreo Cupcakes.  Grab your sunglasses…they’re bright!


Strawberry Oreo Cupcake Batter:
3/4 cup sugar
1/2 cup Strawberry Quik
1/2 cup butter
2 eggs
1 tsp vanilla
1½ cups flour
2 tsp baking powder
1/4 tsp salt
3/4 cup milk
14 Oreo cookies, coarsely chopped

Preheat oven to 400°.  Line 12 muffin cups with paper liners.  In large bowl with electric mixer, cream sugar, Strawberry Quik, and butter.  Beat in eggs and vanilla.  Combine flour, baking powder, and salt, add to creamed mixture alternately with milk until batter is smooth.  Fold in chopped Oreo cookies.  Fill paper liners evenly with batter.  As you put pan in oven, turn heat down to 350° and bake for 20 to 22 minutes, until center is set.  Cool completely.

Strawberry Butter Cream Frosting:
1/4 cup butter
1/4 cup butter flavored shortening
1 tsp vanilla
3 cups powdered sugar
1/2 cup Strawberry Quik, sifted
3-4 Tbl milk
Mini Oreos for garnish

Whip butter, shortening, vanilla, powdered sugar, Strawberry Quik, and enough milk to make frosting consistency.  Frost cooled cupcakes, garnished with Oreo crumbs and mini Oreos.

Oreo Truffles

How to glamorize Oreos for the Wedding reception recipe 3.  I was referred  to this recipe by my sister-in-law, thanks Sara.  These are so good!  I wanted a picture with a bite taken from one and had to do it a few times to get it right. ;0)

Oreo Truffles

1 (16 oz) pkg OREO Cookies

1 (8 oz) pkg cream cheese, softened

1 (16 oz) pkg semi-sweet chocolate chips, melted

Crush 36 cookies to fine crumbs, place in large bowl.  Add softened cream cheese and mix with electric mixer until well blended. Scoop cookie mixture into balls, about 1-inch diameter (I used my very smallest scoop to get even size balls).  Makes about 50.  Put in refrigerator.

Melt chocolate chips over double boiler (or microwave).  Dip Oreo balls in chocolate, (I used two fondue forks) place on silpat or wax paper covered baking sheet.  Sprinkle with colored sprinkles, or finely crushed Oreo cookies crumbs.  Refrigerate until firm, about 1 hour. Or…leave plain and when set drizzle with melted white chocolate.  Store truffles, covered, in refrigerator.

White Chocolate Cookies ‘n Cream Fudge

Wedding prep continued.  How to make Oreos (favorite of the Bride) worthy to be served at the wedding reception…recipe 2.

My oh my, this is rich!  There are a lot of different cookies out there to try with this recipe…Nutter Butters, Frosted Animal Cookies, how about Ginger Snaps at Christmas time?  Fun!

White Chocolate Cookies 'n Cream Fudge

White Chocolate Berry Cookies 'n Cream Fudge

3/4 cup butter
1 cup sugar
1 (5 oz) can evaporated milk
2 (12 oz) packages white chocolate morsels
1 (7 oz) jar marshmallow cream
3 cups coarsely chopped Oreo cookies (25 cookies), divided
Pinch of salt

Line a 9″ square pan with foil, set aside.

Combine butter, sugar, and evaporated milk in a medium saucepan.  Cook over medium-high heat, stirring constantly, until mixture comes to a boil.   Cook 3 minutes, stirring constantly.  Remove from heat, add white chocolate chips, marshmallow cream, 2 cups chopped cookies, and salt.  Stir until chips melt.

Pour fudge into prepared pan.  Sprinkle remaining 1 cup chopped cookies over fudge, gently press cookies into fudge.  Cover and chill until firm (about 1 to 2 hours).

Lift uncut fudge in foil from pan to cutting board, remove foil, and cut fudge into squares.  I cut it 8×8 got 64 pieces.

White Chocolate Covered Oreos

I am in full wedding planning mode.  Rachel (my daughter) & Scotty are getting married!

One of Rachel’s requests for their wedding reception is Oreos, she loves them.  OK, how to make Oreos elegant…or wedding reception acceptable.  Let the fun begin!

That’s better…and yummy!  The colors for the wedding are cream, gray, and pink.  The pink sprinkles I had on hand were too bright and looked ugly.  I will go shopping for something pretty, we will see.  I am taking suggestions or comments, and definitely stopping at eating one!

1 (12 oz) package of good chocolate chips, semi sweet, dark, or white
1 Tbl shortening (do not substitute butter or some other fat)
1 package Oreos, double stuff, golden, peanut butter, mint, or holiday
chips of another color for drizzling on top of finished cookies or sprinkles

Line two baking sheets with Silpats or wax paper.

Mix chocolate chips and shortening in a large glass bowl.  Microwave for a few seconds at a time, stirring and checking to see when it’s fully melted.  Careful, so you don’t end up with scorched chocolate.  I melted mine over a double boiler on low, when just melted I turned off heat.

Put Oreos into melted chocolate one at a time and cover with chocolate.  I used two forks to lift the Oreos out of chocolate, I set the cookie on one fork and let some chocolate slide off and used the other fork to skim some off the top so there is a nice even layer but not too much.  Gently run the fork around the outside and under the bottom of the cookie, careful not to touch, just to remove excess chocolate.  Place cookie on baking sheet.  If using sprinkles, sprinkle now before set.

When all cookies have been dipped, put baking sheet in refrigerator for about half an hour until chocolate sets.  Now you can melt chocolate for drizzle if desired.  Take cookie sheet out of refrigerator and drizzle some chocolate across top.  You can use a ziplock baggie with a little hole cut in one corner or just dip a fork into chocolate and drizzle over cookies.  Let set completely in fridge.  This recipe coveres about 22 Oreos.

Chocolate Chip Cookie Oreo Brownies

We have been spending a few days in a cabin up Parley’s Canyon in Utah.  It is so beautiful and peaceful.  We have been watching movies and playing games, so we need a treat, right?  The cabin has a full kitchen but we didn’t want to spend a lot of time, so baking from scratch was out.  Thanks to a picture on the internet, this is what we did…

Layer of Chocolate Chip Cookie Dough then Oreos
Pour Brownie Batter over Oreos

Preheat oven to 350°.  Mix chocolate chip cookie dough as directed on package.  Press into a 9×13 sprayed pan.  Place a layer of 24 Oreos on cookie dough layer.  Mix brownie mix (9×13 Family Size mix) as directed on package, pour over Oreos.  Bake for 45-50 minutes or until pick in center comes out clean.  So yummy!

Mini Oreo Cheesecakes

There is a whole page on Pinterest of Oreo cheesecake pictures, fun to look at.  Oreos and cheesecake are favorites of my daughter Rachel, so mixing the two together are a little bit of heaven.  Too bad Rachel is away from home and didn’t get to taste these.  I will be making them again.

1 cup crushed Oreo crumbs
4 Tbl butter, melted

Combine Oreo crumbs and melted butter, stir until combined.  Press scant tablespoon into each mini muffin cup, press to level and cover bottom. Set aside.

2 (8oz) pkgs cream cheese, room temperature (Neufchatel is fine)
1/2 cup sugar
1/2 tsp vanilla
2 large eggs, room temperature, lightly beaten
1/2 cup sour cream
Pinch of salt
6 coarsely chopped Oreos

Preheat oven to 275°.  Beat cream cheese on medium with electric mixer.  Gradually beat in sugar and vanilla.  Pour in beaten eggs, a little at a time.  Beat in sour cream and salt.  Stir in chopped cookies by hand.  Scoop batter into each muffin cup over crust, filling each almost to the top.  Bake, rotating pan halfway through, until filling is set, 22-25 minutes.  Cool in pan for about 15 minutes, on a wire rack, then transfer to a plate and put in refrigerator for at least 4 hours.  Before serving, top each cheesecake with dollop of stiffly beaten whipped cream and a mini Oreo cookie.  Makes about 20.
