Fresh Peach Raspberry Cobbler

I need to hurry and use three gorgeous big peaches and some beautiful raspberries before they are over ripe.  It’s easy to stir together a cobbler, I made this cobbler with an oat topping, it gives it a bit of a nutty texture.  An easy way to peel the peaches is to boil a saucepan of water, cut an X through the skin at the end of each peach.  Place the peach in the boiling water for 45 seconds, remove with slotted spoon.  Using the cut X, peel skin right off the peach, so quick and easy.  Fresh peaches and raspberries, heavenly!

  

Topping:
1½ cups oats
1/2 cup flour
1/2 brown sugar
6 Tbl butter, melted

Stir together oats, flour, and brown sugar.  Pour melted butter over and mix until evenly coated and set aside.

Filling:
3 cups sliced peaches
2 cups raspberries
1 Tbl lemon juice
1/4 cup flour
1/2-3/4 sugar

Preheat oven to 350°.  Gently mix peaches, raspberries, and lemon juice.  Stir together flour and sugar and sprinkle over fruit and gently mix.  Spoon filling into well sprayed 9″×13″ baking dish.  Sprinkle topping over fruit and bake about 30 minutes or until bubbly.  Let stand for 10-15 minute and serve.

Peach Pecan Breakfast Cake

Sweet juicy peaches!  We are enjoying them while they are in season, a sweet surprise in this delicious breakfast cake.

Streusel Topping:
3/4 cup flour
1/4 cup sugar
1/3 cup brown sugar
1 tsp cinnamon
1/2 tsp nutmeg
6 Tbl cold butter
3/4 cup chopped pecans

Cake:
1¾ cups flour
3/4 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 eggs
6 Tbl butter, softened almost melted
1/2 cup buttermilk
2 tsp vanilla
2 peaches, peeled and sliced about 1/4 inch

Preheat oven to 350°.  Spray and flour a 9″ round springform pan.  In medium bowl, stir together flour, sugar, brown sugar, cinnamon, and nutmeg.  Cut in butter with pastry blender until coarse crumbs form.  Stir in chopped pecans, set aside.  In large bowl, stir together flour, sugar, baking powder, baking soda, and salt.  In medium bowl, beat eggs, soft butter, buttermilk, and vanilla until creamy.  Stir into flour mixture and mix just until evenly mixed.  Do not overmix.  Spoon batter into prepared pan and spread evenly.  Arrange peach slices on top of batter.  Gently press slices into batter, and sprinkle streusel topping evenly over top of peaches.  Bake 40 to 45 minutes, until topping is golden brown and toothpick inserted in center comes out clean.  Cool on wire rack for about 20 minutes.  Serve cake warm or room temperature.

Peach Banana Bread

Just having some fun with the good old standby.  It’s yummy!

                       

1/2 cup oil
1 cup sugar
2 eggs
1 cup mashed ripe bananas
1 (6 oz) peach yogurt
1/4 cup sour cream
1 tsp vanilla
2 cups flour
1½ tsp baking soda
1/2 tsp salt
1 cup chopped fresh or frozen peaches
1 cup chopped walnuts

Preheat oven to 350°.  In large bowl, mix oil and sugar.  Add eggs, banana, yogurt, sour cream, and vanilla, mix well.  Stir together flour, baking soda, and salt, add to creamed mixture.  Fold in peaches and walnuts.  Pour batter evenly into 4 small loaf pans that have been sprayed with non-stick spray.  Bake for 35-40 minutes, until center top is set and pick inserted comes out clean.  Cool about 5 minutes in pans then remove and cool on wire rack.

Peach Cobbler Cupcakes with Cinnamon Honey Buttercream Frosting

Cupcake time!  A tender Peach cupcake with a hint of cinnamon and nutmeg topped off with a creamy cinnamon honey buttercream frosting sprinkled with cinnamon sugar.  It’s a peach!

Cupcakes:
1 cup sugar
2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp salt
3 eggs
1 tsp vanilla
1/2 cup oil
1/2 cup peach juice (from can of peaches)
1 (29 0z) can peaches, drained reserving juice, small dice

Preheat oven to  350°.  Prepare cupcake pans with papers, recipe makes 18 cupcakes.  Stir together sugar, flour, baking powder, baking soda, cinnamon, nutmeg, and salt.  In large bowl with electric mixer, mix eggs, oil, peach juice, and vanilla.  Mix in dry ingredients.  Fold in peaches.  Scoop batter into prepared cupcake cups, filling papers almost to top.  Bake for 18-22 minutes, until top center is set.  Cool completely.

Frosting:
½ cup butter
¼ cup shortening
3 cups powdered sugar
¼ tsp cinnamon
5 Tbl cream
3 Tbl honey
Cinnamon/Sugar

With electric mixer, cream butter and shortening.  Add powdered sugar, cinnamon, cream, and honey.  Beat until whipped creamy frosting consistency.  Frost cooled cupcakes and sprinkle with cinnamon/sugar.

Peach Cobbler Muffins

Oh how I love muffins, a perfect yummy package!  Especially with sweet peaches and a crunchy, buttery crumb topping.

                       

1½ cups flour
2 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 cup butter, softened
2/3 cup sugar
1/4 cup oil
1 egg
1/2 cup buttermilk
2 tsp vanilla
1 cup chopped fresh or frozen peaches

Preheat oven to 350°.  Place 6 cup muffin tray on perforated sheet, or spray 6 muffin cup pan with non-stick spray.  In large bowl whisk together flour, baking powder, salt, cinnamon, and nutmeg, set aside.  In medium bowl cream butter and sugar.  Mix in oil, egg, buttermilk, and vanilla.  Add wet ingredients to dry ingredients and mix just until combined.  Fold in peaches.  Scoop batter into prepared pan. 3 Tbl flour
3 Tbl brown sugar
1/4 tsp cinnamon
2 Tbl butter, cold

In small bowl stir together flour, brown sugar, and cinnamon.  Cut cold butter into mixture to make coarse crumbs.  Scoop rounded tablespoon of mixture onto batter in each muffin cup.  Bake for 26-30 minutes until center is set.  Cool in pan for 15 minutes, remove to wire rack to finish cooling.

Fresh Peach Blueberry Pie

My niece Ashley is so fun, she is 11 yrs. old and loves to watch Food Network and cook.  She stayed with us recently and brought a cookbook she had checked out from the library with bookmarks of things she wanted to make.  It was her idea to make a peach blueberry pie.  These two flavors compliment each other so well.  Thanks Ashley for a great idea!


1 recipe for a 9 inch double crust pie pastry
1 tsp. flour

Filling:
5 to 5 1/2 cups sliced, peeled fresh peaches
1½ cups fresh blueberries
1 Tbl lemon juice
1 cup sugar
4 Tbl quick-cooking tapioca
1/4 tsp salt
2 Tbl butter
sugar for top of pie
whipped cream or vanilla ice cream, if desired

Prepare pie crust, line deep dish pie plate with half pastry, sprinkle with the 1 tsp flour , set aside.  Heat oven to 425°.

In large bowl, combine peaches, blueberries and lemon juice.  Add sugar, tapioca, and salt; toss gently.  Spoon fruit mixture into pie crust lined pan.  Dot with butter.  Cover with top crust, cut slits in several places. Sprinkle with sugar.  Bake at 425° for 40 to 50 minutes or until golden brown.  Cover edge of pie crust during last 10 to 15 minutes of baking to prevent excessive browning.

♦Frozen peaches and blueberries, thawed and drained, can be substituted for fresh.
