Strawberry Cheesecake Brownies

Brownie Layer:
1/2 cup flour
1/2 cup + 2 Tbl sugar
1/2 cup unsweetened cocoa powder
1/4 tsp baking soda
1/4 tsp salt
1/2 cup plain Greek yogurt
3 Tbl milk
1 egg
1 tsp vanilla

Strawberry Cheesecake Layer:
1 (8 oz) cream cheese, room temperature
1 cup plain Greek yogurt
2 eggs
1/2 cup sugar
1½ tsp vanilla
1/2 cup strawberry jam

Preheat oven to 350°. Line a 8″x8″ pan with foil and spray with non-stick spray. For the brownie layer, whisk together flour, sugar, cocoa, baking soda, and salt. In anotherl bowl, whisk together yogurt, milk, egg, and vanilla. Add to the dry and mix just until combined. Do not over mix. Spread batter evenly into prepared pan. For the strawberry cheesecake layer, beat together cream cheese, yogurt, eggs, sugar, and vanilla until smooth. Pour gently over the brownie layer and spread evenly. Drop clumps of strawberry jam on top and pull a knife through each clump to gently swirl. Bake 20 minutes, turn oven temperature down to 325° and continue baking 20 minutes more. Remove from the oven and let cool before cutting. Store covered in the refrigerator.

Strawberry Apple Spice Cake

This is an incredibly flavorful moist cake.  There are many different flavors, but all work so well together.  Inspired by a recipe, I made a few adjustments to suit our family.  Delicious!


3/4 cup butter, softened
1½ cups sugar
1 cup strawberry jam
1 egg
1 tsp vanilla
3 1/3 cups flour
1½ tsp baking soda
1½ tsp ground nutmeg
1/2 tsp each ground allspice, cloves and cinnamon
1½ cups buttermilk
3/4 cups mini chocolate chips
3/4 cup chopped pecans
3/4 cup chopped peeled apple

Preheat oven to 350°.  Grease and flour bundt pan.  In large bowl with electric mixer, cream butter and sugar until light and fluffy.  Mix in strawberry jam, egg, and vanilla.  Combine flour, baking soda and spices; add to creamed mixture alternately with buttermilk, beating well after each addition.  Stir in mini chocolate chips, pecans, and apple.  Pour into prepared bundt pan.  Bake 1 hour or until toothpick inserted in center comes out clean.  Cool for 10 minutes before removing from pan to wire rack.  Cool completely then glaze.

2 Tbl strawberry jam
1/2 cup powdered sugar

In small bowl, microwave jam for  a few seconds to thin.  Stir in powdered sugar and spread over top of cake.

Chocolate Cupcakes with Strawberry Buttercream Frosting

I was craving chocolate cake and I love strawberry buttercream so this is what my daughter Lindsay and I made for our family dinner.  My daughters are home for a visit, love it when the family is together.  Nice frosting and drizzle Linds!

Chocolate Cupcakes:
2 cups flour
2 cups sugar
3/4 cup unsweetened cocoa
1½ tsp baking soda
1½ tsp baking powder
1 tsp salt
2 eggs
1 cups milk
1/2 cup oil
2 tsp vanilla
1 cup boiling water

Preheat oven to 350°.  Put papers into 2-12 cup pans (recipe makes 24 cupcakes).  In large bowl, stir together flour, sugar, cocoa, baking soda, baking powder, and salt.  Mix together eggs, milk, oil, and vanilla.  Add egg mixture to dry ingredients and mix with electric mixer until well incorporated.  Add boiling water and mix well.  It is a thinner batter, but bakes up nicely.  Evenly distribute between 24 cups and bake for 22-25 minutes.  Cool completely.

Strawberry Buttercream:
1/2 cup butter, softened
1/2 cup shortening
4 cups powdered sugar
4 Tbl strawberry jam
4 Tbl milk

With electric mixer, mix butter, shortening, powdered sugar, jam, and 1 Tbl at a time of milk until desired consistency.  Frost completely cooled cupcakes.  Drizzle with melted semi-sweet chocolate if desired.
