Quick & Easy Yeast Rolls

These rolls only need one rise.  Mix, drop in muffin cups, rise to double, and bake.  Quick & Quite delicious.

1 pkg dry yeast
1 cup warm water
1/4 cup sugar
1 egg, beaten
2 tsp salt
1/4 cup oil
3 cups flour

In large bowl of mixer, dissolve yeast in warm water.  Sprinkle sugar over yeast, let sit for 5 minutes.  Add egg, salt, oil, and flour.  Mix until well combined and knead for 5 minutes.  Fill sprayed muffin cups half full, cover with towel, and let rise in warm place until double about 1 hour.  Bake at 400° for 13 to 15 minutes.  Brush tops with butter while still warm.  Makes 12 rolls.
