Double Chocolate Coconut Cookies

More cookies!  Can’t get enough at Christmas time, must make more cookies!

1 cup butter, softened
1/2 cup sugar
3/4 cup brown sugar
1 egg
1 tsp. vanilla
2 cups flour
1/4 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
2 cups white chocolate chips
1 cup coconut
1 cup chopped walnuts

Preheat oven to 375°.  Cream butter, sugar, and brown sugar with an electric mixer.  Mix in egg and vanilla.  Mix flour, cocoa powder, baking soda, and salt into a medium bowl.  Add to creamed mixture on low speed until well combined.  Stir in chips, coconut, and walnuts.  Drop batter by desired scoop size onto baking sheets.  Bake until set, 8 to 12 minutes depending on the size of the cookie.
