Applesauce Oatmeal Spice Cake with Chocolate Cinnamon Frosting

If you want a moist, large sheet cake to feed a lot of people and to pretend that it is good for you because it has applesauce and oats in it, this is the cake!

Applesauce Oatmeal Spice Cake

Applesauce Oatmeal Spice Cake:
1 cup butter, softened
2 cup sugar
2 eggs
3½ cup flour
2 cup oats
3 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cloves
1 tsp salt
1 cup applesauce with 2 tsp baking soda stirred in
1 cup sour cream
2 cup mini chocolate chips
1 cup chopped walnuts

Preheat oven to 350°.  Cream butter and sugar.  Add eggs and blend well.  Add flour, oats, cinnamon, nutmeg, cloves, and salt. Mix just enough to blend in dry ingredients.  Fold in applesauce with baking soda, sour cream, mini chocolate chips, and nuts. Spread in a large greased cookie sheet and bake for 23-25 minutes.  Cool completely.

Chocolate Cinnamon Frosting:
1¼ cups sugar
6 Tbl milk
6 Tbl butter
1 cup semi-sweet chocolate chips
2 tsp cinnamon
1 tsp vanilla

In saucepan bring sugar, milk, and butter to a boil and boil only for 1/2 minute.  Remove from heat and add chocolate chips.  Stir until chips are melted.  Add cinnamon and vanilla.  Mix.  Pour and spread over cooled Applesauce Oatmeal Spice Cake.
